Texas Daily Harvest, Certified Organic Farm and Dairy
This is a family-owned and operated farm in northeast Texas. We produce a variety of products.
We have a certified organic garden on our farm, with seasonally available produce. Each year, we offer shares in an Organic Produce CSA. In addition, when there is more produce than needed for the CSA, it is available for purchase in our store. We may also offer locally grown produce from other farms. When this is the case, we will tell you the source in the description of the product.
We make a variety of cheeses on the farm. We make some raw milk cheeses (typically Gruyere, Parmesan, Gouda etc.). They must be aged a minimum of 60 days before they can be sold. Aging produces some really incredible cheeses, especially when they are more than a year old. Unfortunately, the drought of 2011 pretty much wiped us out of stored cheeses.
The cows did not give enough milk during the drought to make any cheeses at all, so we pulled all the aging ones out to sell. We began making more in January when the Winter rains brought on good Winter pasture and the milk production came back up to more normal levels.
We were also able to begin making fresh cheeses again, for which we use our pasteurized milk. Look in our web store for Texas Cheddar, Jalapeno Cheddar, Colby, Feta, and others, including fresh cheese curds in a variety of flavors.
We sell beef from our farm. These are dairy animals, so they have been eating primarily grass with a small amount of organic grain. They are certified orgnanic animals. We do not have a certified organic processor to use, however, so we can not label the beef as organic. We think you will find the flavor is without comparison. As with all grass fed beef, you must be careful not to overcook it because it is leaner.
We have been very pleased with the pigs we are raising. Large Black Hogs (that is the registered breed) are a heritage breed known for grazing. And also for producing some of the best pork ever. These pigs live outside, and they truly graze. They do not live on concrete. Ever. They produce a juicy, flavorful meat that is like no other.
Nitrate Free Meats
Have you, like us, stopped eating lunchmeat, hotdogs etc. because of the nitrates added and the excessive processing? We are happy to provide nitrate free meats. You can enjoy our bacon, ham, hotdogs, bologna, salami, all of our meat products. None of our products have nitrates added. We think you will also enjoy these products for their seasoning and minimal processing. Even the hotdogs and lunchmeats are a coarser grind, more like sausage and nothing like the "meat paste" products typically sold in stores. We eat these products and feed them to our children, we think you will be happy to do the same.
When we find them, we will provide other local products that we think you will appreciate. We will always tell you where they come from. These may include things like coffee, honey, bread, and other locally produced things.
